As the ice storm continues outside, it seems the best way to keep my flat warm is to crank up the oven. Tonight I had to make use of several varieties of squash before they ruined, and I found some great new recipes to try. The best thing about cooking several dishes at once is having them on hand for the rest of the week, keeping me from having to cook again until the weekend (or even later). I do love the winter season!
spaghetti squash with lemon and tomatoes (based on this recipe)
zucchini and rice casserole with Italian sausage and cream cheese sauce (taken from this recipe)
and a quick sauté of the remaining squash with a bit of onion, salt and pepper, just the way my mother makes it
